Again, here's more of the "traditional." This is another entirely
different fermenter design. During the main part of the fermentation, the
beer foams up considerably. A door is slid into place blocking this opening.
Once fermentation begins to subside, the door can be removed and yeast
harvested from the fermeter through this opening (the yeast rides up on
the foam).
The company mascot, a ram, what else? There's also a pond within
the walls where the brewery's geese and other waterfoul waddle about. The
mascot's pen is just across from the stables where Young's keeps 20 horses
(mostly shires) to pull the drays. Deliveries to local pubs are still done
by horse and dray!
